Brand The Sublime brand is marketed under the strapline ‘Lovingly sourced, naturally flavoured’ to top chefs and restaurateurs in London and across the UK’s Southeast region. The company’s directors see provenance as key to the brand’s success. Provenance Sublime ice creams feature only natural ingredients, most of which are sourced locally. The company uses cream and milk from a local Kentish dairy, combining it with fresh fruit from farms in Kent, the county known as the ‘Garden of England’. Some Sublime ice creams also feature exotic flavours, aromatic spices and premium liqueurs from around the world. The firm is committed to its ‘no junk’ promise, resulting in products with no artificial additives, colours, flavours or stabilisers, as well as no preservatives, GM ingredients, gluten, bulking agents, milk powder or reconstituted whey. Production Ice creams from Sublime are handcrafted using traditional methods in order to create what the company claims to be the optimum blend of taste, texture and temperature. Sublime’s production process uses less sugar than many of its competitors, resulting in products that are generally healthier. Unlike in mass manufacturing, traditional ice cream production techniques involve adding only sufficient air to allow the ice cream to be scooped. In contrast, many of the ‘soft scoop’ ice creams found in the UK’s supermarkets contain more than 50% air to bulk out the product, a method known as ‘overrun’. According to gourmets, ice creams with less air have a greater intensity of flavour.
