Honey cookies are spice cookies, like gingerbread cookies, that were made famous by the historic Nut Tree Restaurant in Vacaville, California. At the Nut Tree, honey cookies were made in all different shapes like trains, blimps, and animals. Then they were frosted by professionals and put out for sale. Some people thought they were so artistic that they never ate them. In 1996, when the Nut Tree closed, the honey cookie recipe was published in a recipe book by the Vacaville Museum from 1997 to 2009. When the Nut Tree Family Park opened, in their membership packages were gifts associated with the Nut Tree like a honey cookie recipe and cookie cutter. Not long after a shop called Vintage Sweet Shoppe at the Nut Tree Marketplace started making the honey cookies and at this present time still are.
