The Yabbie Schnitzel is an Australian delicacy, popular in southern Queensland and New South Wales. It was first envisioned by local food business Lucas & Dylan in Newcastle. After months of searching for the yet-to-be created Yabbie Schnitzel, they decided to draft a recipe. After the recipe gained approval from their head chef, they decided to release the Yabbie Schnitzel to the Australian public. The original Yabbie Schniztel recipe is still maintained to this day. The ingredients required are: 2 metric cups of fresh breadcrumbs, 1/3 cup of finely grated Parmesan cheese, 1 tbsp of finely grated lemon rind, 2 tbsp of finely chopped freshly flat-leaf parsley leaves, 1 tsp of garlic powder, 1 egg, 1 tbsp of milk, 550g of meat. # Combine breadcrumbs, parmesan, lemon rind, parsley and garlic powder on a plate. Season with salt and pepper. Place flour on a plate. Whisk egg and milk together in a shallow bowl. 2. Coat 1 piece of yabby in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumb mixture. Place on a plate. Repeat with remaining yabby, flour, egg mixture and breadcrumb mixture. 3. Heat oil in a frying pan over medium-high heat. Cook yabby, in batches, for 4 to 5 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel to drain. Serve.
