Acero is an Italian restaurant located in Maplewood, Missouri at 7266 Manchester Road, in suburban St. Louis. It is owned by chef Jim Fiala and the Executive Chef is Adam Karl Gnau. James Fiala also owns The Crossing in Clayton, Missouri and Liluma in St. Louis' Central West End neighborhood and also the terrace view in the city garden. Acero features the food of the different states in Italy. Acero is the Italian word for "maple" and is pronounced "ah-CHER-oh." Entrees at Acero include Sea Scallops with a Mushroom Ragu, Porchetta with Polenta and Hormone-Free Sirloin with spinach and fennel. Acero's menu includes Egg Raviolo. This appetizer features a soft-boiled egg yolk wrapped in pasta, plus three cheeses and a touch of fresh spinach. It also features Italian wines. Acero was included in the 2008 annual restaurant issue of Bon Appetit magazine. “The Best Italian Food in America” were the words on the cover of the issue (September, 2008.) Acero was the only St. Louis restaurant to be included. Acero's Tuscan White Anchovies are shown on the cover of the March, 2009, issue of Sauce magazine, a dining publication distributed in the St. Louis area.
