Potato Valley Cafe is a restaurant that was first opened in Annapolis, Maryland, which serves meals consisting of salads and sandwiches, or of potatoes which are roasted and filled with toppings. The restaurant is only open during lunch. There is a second location in Washington D.C. At one time, there was a restaurant in Las Vegas, Nevada, but it is now closed. History Barbara Ripani and her husband Anders Ekbladh were inspired by a Swedish restaurant chain that serves potatoes with fillings and they opened Potato Valley Cafe in Annapolis in 1994. The potatoes are covered with olive oil and then roasted at 400 degrees, and can be ordered plain, or filled. Fillings reflect various ethnic interests. Jamaican hot sauce, Cuban chicken, and chicken curry are samples of the mix of different cuisines available. The owners are not worried about competition because the restaurant's "signature cuisine is so unusual." The owners had trouble getting people's minds around the concept of potatoes being served as a meal. The book Let's Go USA described Potato Valley Cafe as "a Swedish coffeehouse with an Idaho twist specializes in oven-roasted potatoes stuffed with fillings."
