Ahwrlaf Topkapi

Mr Ahwrlaf Topkapi is a London kebab and Turkish food expert, considered to the be Turkish equivalent of Jamie Oliver. He was awarded with the 2004 award - the Turkish equivalent of the Michelin Star. He works in a small independent restaurant situated in Hendon, North London.
History
Mr Topkapi started his long standing culinary career in Northern Turkey aged just 12, initially working with his grandfather Udum Topkapi (griller of goats) at their grandfather's local eatery. His one eyed grandmother invented the Topkapi chilli sauce secret recipe, which has remained unchanged until 2001, when the death of the family goat caused an increase in the number of chilli's per spoonful - from 23, to 28.
Moustache Incident
In early 1994, Mr Topkapi was the centre of some unlikely controversy over the size of his moustache. Local health investigators deemed it a safety hazard after a child from nearby Hendon School found a hair in their Burger Special. He was given the ultimatum that he either had to remove the offensive moustache or move his kebab restaurant to Haringey.
Marketing
Mr Topkapi is famous for his innovative marketing through the YB approach. Simply explained in his book "Gözlerin çok güzel" this encompasses the "Yes Boss" approach to selling.
* Y - You

understand the customer
* E - Eat

understand the customer's needs
* S - Sleep

you must also look after yourself
* B - Burger

keep your mind on the sale
* O - Or

try and sell the customer extras to increase revenue
* S - Sauce

extras such as sauce are potential moneyspinners
* S - Sells

close the sale
This has since become the standard for selling within many urban businesses.
Kourdum
The Kourdum kebab is a culinary speciality from a goat herding village in Northern Cyprus. It is the dish that Mr Ahwrlaf Topkapi cooked 15 times in succession to win the coveted 2004 award. In order to win this award the results must be absolutely identical with many different meats, in addition to this the Kebab must be cooked on a knitting needle.
The man from Del Monte was inspired by Ahwrlaf Topkapi's innovative "Yes Boss" marketing approach and adopted this throughout his 1980s advertising campaign with the tagline "The man from Del Monte - he says yes".
