Two Miranda class starships named USS Saratoga have appeared in the fictional Star Trek universe.

NCC-1867

A 23rd century starship disabled by an alien probe in the film, Star Trek IV: The Voyage Home. This starship's commanding officer is noteworthy in Star Trek lore for being the franchise's first appearance of female starship captain.

NCC-31911

The USS Saratoga (NCC-31911) was one of 39 ships destroyed during the Battle of Wolf 359. The ship was commanded by an unnamed Vulcan captain. Lieutenant Commander Benjamin Sisko was the executive officer at the time of the battle. Sisko's wife was killed during the battle; he and his son Jake escaped the ship shortly before its destruction. They were rescued some time after the battle.
