Mario Santoro

Mario Santoro was born in Cuba in 1968. His father, Ambassador Giuseppe Santoro, has been part of the Diplomatic Delegation to Cuba, Canada, Tunisia, and the United States. During those years the Santoro family was exposed to and came to appreciate many diverse cultures and cuisines. Mario's mother, Ingrid Woith, took great advantage of these opportunities to develop her cooking talent and learned how to cook dishes from each country they lived in. Mario Santoro grew-up in an environment where food culture was international and he developed a grand passion for all cultures and cuisines.

Education

Mario studied at Università La Sapienza in Rome, where he completed the faculty of Sociology in 1993 and got his Master Degree specializing in Anthropology of Visual Communication.
In 1995 he completed a Certificate course in darkroom techniques at the School of Visual Arts in New York. In addition he attended a course in Studio Photography at the International Center of photography in New York.

Photography

Mario Santoro has dedicated much of his life to his artistic career as a photographer. He has exhibited in the USA, Japan and Europe. For the last 10 years he has lived in "'Umbria"', where he created  a photography studio of 400 square metres where he continues producing his photography.

The TodiCastle project

With his father, Ambassador Giuseppe Santoro, Mario has worked to transform the family Estate into a farm and a welcoming accommodation for international guests.
TodiCastle Estate includes a Medieval Castle (now a Historic Hotel) and three Villas, surrounded by nature and uncontaminated by the stress of modern life. The property is in the vicinity of Todi.
At TodiCastle Mario Santoro has created his ideal microcosm of a great ecological environment with the best Umbrian wines and high quality food.
This is the product of Mario's constant and accurate work and research. The Estate produces both wine and olive oil. In addition there is an orchard and vegetable garden. All the products are organic and, because of the small production, used exclusively  by the Santoro family and shared with guests and tourists. Mario has also developed his talent for cooking primarily using ingredients from the TodiCastle Estate and local farms.
Mario enjoys giving cooking classes for his guests specializing in pasta, risotto and vegetables. All recipes are made with organic ingredients (vegetables, fruit, cheese, etc) produced on the Estate.
