Kabuto (restaurant)

Kabuto is a Japanese and sushi restaurant in Spring Valley's Tokyo Plaza. The restaurant was opened by Chef Gen Mizoguchi in 2012 and is considered to be one of the best sushi restaurants in the United States.

The menu consists of an Omakase tasting menu, costing $80 per person, not including tip, tax or drinks, and a Nigiri tasting menu. The fish is imported from Japan's Tsukiji fish market daily and the menu changes each day based on quality and seasonality. Reservations for the 18 available seats are taken up to one month in advance.

Like most traditional restaurants in Japan, Kabuto does not have a sign.]] Kabuto was ranked by Bon Appetit to be one of The 50 best restaurants in the United States in 2012, just months after opening. The restaurant garnered a prestigious 16/20 from the Gayot guide in their first year of operation, the same rating given to Momofuku Ko in New York City, which holds two Michelin stars. In December 2012, Travel + Leisure ranked the restaurant among the 32 best sushi restaurants in the United States.
