Shropshire pudding

A Shropshire pudding is a variant on the traditional Yorkshire pudding. It is more dense and slightly sweeter due to a small amount of brown sugar being added to the batter. The addition of sugar serves to sweeten the pudding. The reason for the higher density is in the cooking technique, unlike a Yorkshire pudding, the oven should be periodically opened during cooking, causing the rising batter to flatten. It is rumored that this is the origonal origin of the phrase "settle-down Shropshire" The original county of origin is believed to be Staffordshire, but the pudding was more popular in Shropshire. A Staffordshire pudding now describes an egg custard and jam desert, served in a pastry case.
