Trail Bologna is a chunky bologna made with coarse cuts of meat, native to Trail and Holmes county, Ohio. If you are not from the area, it is quite possible you have never heard of it. Though it is called a bologna, it is made and served in a sausage stye ring. Trail Bologna is usually best served with swiss, baby swiss, cheddar, or hot pepper cheese. Trail bologna is considered a folk food.
Trail Bologna was created in the town of Trail, Ohio by the Troyer family. "Starting in 1912, Michael Troyer created a unique blend of special seasonings to make his now famous all-beef bologna. The family continues the tradition of excellence to this day by making literally tons of the savory treat daily".
